Fresh salads are a staple in many European kitchens during spring and summer. This recipe is inspired by the Mediterranean: fresh, colorful, balanced, and perfect for sharing.

Ingredients (2 servings):

  • 1 medium cucumber (thinly sliced)

  • 2 large tomatoes (diced)

  • 100 g feta cheese (crumbled)

  • ¼ red onion (thinly sliced)

  • Black olives (to taste)

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • Fresh basil and oregano

  • Salt and pepper to taste

Preparation:

  1. Combine cucumber, tomatoes, and onion in a bowl.

  2. Add feta cheese and olives.

  3. Drizzle with olive oil and lemon juice, season with salt and pepper.

  4. Garnish with fresh herbs and serve chilled or at room temperature.

Serving Suggestions:
