Authentic Bouillabaisse Recipe: Traditional Fish Soup from Marseille
Bouillabaisse is a traditional fish soup from Marseille, in the Provence region of France. Once a humble fisherman's meal, it's now a refined dish featuring a mix of fresh seafood, herbs, and saffron broth. Each bite captures the soul of the Mediterranean coast.
Ingredients (4 servings):

1 kg assorted fish (monkfish, hake, conger, etc.)

200 g mussels

200 g shrimp

1 leek
-
2 tomatoes

1 onion
-
2 garlic cloves
-
1 fennel sprig

1 bay leaf
-
A pinch of saffron

750 ml water

Olive oil
-
Salt and pepper.
Instructions:

Sauté onion, garlic, leek and tomatoes in olive oil.

Add fennel, bay leaf, and saffron.

Add fish and cover with water. Simmer for 30 min.

Add shellfish, cook 10 min more.

Season and serve with toasted bread and rouille sauce.
