Herve Piquant Cheese is a member of the soft-rind cheese family. This involves regular ripening since each cheese is washed and returned several times a week. It is thanks to the long and methodical maturation of the cheese which acquires over the weeks an orangey and slightly oily crust as well as its typical taste and smell. Traditionally, it is tasted by the ancients with a little cork syrup and a cup of coffee. It is a great end-of-meal cheese that will happily accompany a warm wine, a vintage port or a dark abbey beer. Fans also like it with a good Gewurtztraminer.
